Birthday Cheesecake recipe
- 200 g of Belvita biscuits ( Biscuits to your liking)
- 75 g of butter (melted)
- 600 g of cream cheese, softened
- 100 g of sugar
- 2 eggs
- 1 tsp of vanilla extract
- 2 tbsp of flour
- 300 ml of whipped cream
- Fruits of your choice for topping
To make the cheesecake, follow these steps:
- Preheat oven to 180°C (160°C fan-forced) and grease a 20 cm springform pan.
- Crush the biscuits in a food processor or a ziplock bag until fine crumbs form. Transfer to a bowl and stir in the melted butter. Press the mixture evenly over the base and sides of the prepared pan. Refrigerate for 15 minutes to set.
- In a large bowl, beat the cream cheese and sugar with an electric mixer until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract and flour until well combined.
- Pour the cream cheese mixture over the biscuit base and smooth the surface. Bake for 35 to 40 minutes or until set but still slightly wobbly in the center. Turn off the oven and leave the cheesecake inside with the door slightly ajar for an hour to cool gradually.
- Refrigerate the cheesecake for at least 4 hours or overnight to set it completely.
- Before serving, spread the whipped cream over the top of the cheesecake and decorate with fruits of your choice. Enjoy!😋
